Most of the standard firms offer 50rs to 80rs per hour..that to depends on your ability to work and previous experience in that field..
I am particularly interested in writing educational guides/textbooks but don’t know how to get started.

The people who write, for example, educational guides or texts on quantum physics are quantum physicists. They are invited to write the text by the publisher. Usually you would have already written extensively on the subject.
What are your qualifications? Examine texts in your area of expertise and contact their publishers explaining how you could improve on their current text on the subject.
what would be the best way to do that?
Make sure, first, that you have marketable skills.
Then market them.
Via your personal website or blog, not through a bidding site. This eliminates fees by cutting out the middle man.

The thing I like best about oDesk, as opposed to some other sites that were suggested, is that it’s completely free to set up an account and apply for jobs.

I am starting a freelance business catering to local organizations who cannot afford a marketing or documentation department. I plan to charge $10/page for editing, $20/page for redesign, or a flat rate for large projects. Is this a good model? Is the rate too low/high? I have 10yrs of experience.
I’ve always seen the rates based per word. If you do a simple search on freelance editing rates, you’ll probably get a better idea of how to price your services competitively. The other way to price is to start with your desired hourly rate and work backwards, figuring out how much you can comfortably complete in an hour and then setting your fees per project.
